Introduction to Masala Fries:
I’m pretty sure being obsessed with fries is a universal thing. Potatoes are by far the most versatile vegetable I think of. You can simply salt and fry them and they taste amazing. But why stop there? These masala fries really up the ante! Just when you thought fries couldn’t get better, they do. These masala fries are packed with flavor. And on the side, they are served with a spicy yet refreshing cilantro chutney.
I also love that you can make these quickly in the airfryer! These masala fries are the perfect appetizer or side for any meal. In particular, I think they’d pair super well with my aloo tikki burger recipe! Plus you’ll already be making the cilantro chutney for the burger, so you’ll be able to use it for two separate recipes.

Fries
These fries are super simple to make. All you’re doing is covering them in loads of spices and brushing them with a little oil. For fries, I always like to use gold potatoes because I think they cook a little quicker than russet or red potatoes.

Cilantro Chutney
I have a few variations of green chutney that I often make and this is one of my favorites. It’s super simple and is just made with cilantro, mint, yogurt, and some spices. It’s also totally customizable. If you want to add more tanginess you can also add some lemon juice. And, the spices can be adjusted to taste as well. If you want it this to be spicier though, I would recommend adding more jalapeno rather than chili powder.

Process + Keys to Success:
Fries
- Cut up potatoes into medium-sized fries and coat evenly with all spices and oil.
- Place in air fryer at 400 degrees for about 15-17 minutes. I recommend splitting it up into two batches and shaking each batch halfway into the cooking process.
- PRO TIP: if you want the fries to be ultra crispy, you can parboil them before airfrying. The process of parboiling is basically boiling your fries in heavily salted water. You cook them about half way through, pat them dry, and then add them to the airfryer after. This results in the fries being extra crisp!
Cilantro Chutney
- Simply add all chutney ingredients to a food processor and blend until it turns into a smooth consistency.
