Peel and chop your potatoes into medium sized fries. Coat them evenly in your oil and spices, and pop into the air fryer at 400 degrees for about 20 minutes.
Make sure to split this into two batches and flip each batch half way through each batch.
Roasted Cumin Aioli
On low heat, dry roast your cumin seeds until fragrant. (Around a minute or so - make sure not to over-roast or burn).
With a mortar and pestle, grind the cumin seeds into a fine powder.
Combine roasted cumin powder with your veganaise, freshly squeezed lime juice, and a pinch of salt.
I use the juice from about half a lime for this recipe but feel free to adjust!
