Chili Garlic noodles

Ingredients

  • 3 tbsp soy sauce
  • 2 tsp rice vinegar
  • 1.5 tbsp sriracha
  • 2 tsp red chili flakes
  • 1 tbsp brown sugar
  • fresh cilantro (chopped) (to taste - about 1 tbsp)
  • fresh lime juice (about 1 wedge or to taste)
  • 1 tbsp corn starch
  • 1 tbsp water
  • 2-3 tbsp veggie broth
  • 2 packs of ramen
  • 2 tbsp chopped garlic
  • 2 tbsp oil
  • crushed peanuts (optional)
  • green onions (optional)

Instructions

  • Add your oil to your skillet and then lightly sauté your garlic.
  • Then add red chili flakes and let simmer for a few seconds before adding in the rest of your sauces - soy sauce, rice vinegar, sriracha, brown sugar, and veggie broth. For the corn starch, mix it with the water to create a smooth mixture and prevent clumping.
  • Add in cooked ramen (cook according to package instructions) and then mix noodles well with sauce.
  • Top with lots of fresh lime juice and cilantro. You can also add some green onions and crushed peanuts on top for a crunch!
