Prepare the tofu: Cut the block of tofu lengthwise into 4 thick, tender-sized pieces.
Boil the tofu: Add the water, soy sauce, vegetable bouillon paste, and liquid smoke to a large saucepan. Stir to combine and bring the mixture to a boil. Carefully add the tofu and boil for 7 to 10 minutes.
Cool the tofu: Remove the tofu from the boiling marinade and place it on a plate or wire rack. Allow it to cool before breading. Handle it carefully, as the tofu may be more delicate while hot.
Prepare the wet batter: In a shallow bowl, whisk together the flour, salt, Kashmiri chili powder, onion powder, garlic powder, cumin, and white pepper. Gradually whisk in the water until a smooth batter forms. Add a few additional tablespoons of water as needed to create a thick pancake-batter consistency.
Prepare the dry breading: In a separate shallow bowl, combine the flour, panko breadcrumbs, salt, Kashmiri chili powder, onion powder, garlic powder, cumin, and white pepper.
Bread the tofu: Dip each cooled tofu tender into the wet batter, allowing any excess to drip off. Transfer it to the dry breading and press the coating firmly onto every side. Repeat with the remaining tofu.
Air-fry the tofu: Arrange the breaded tofu in a single layer in the air-fryer basket. Spray generously with oil and air fry at 400°F for 18 to 22 minutes.
Flip the tofu: Flip the tofu halfway through cooking and spray it again with oil. Continue air frying until the coating is deeply golden, crisp, and dry to the touch.
Make the compound butter: In a small bowl, mix the softened butter, parsley, garlic paste, and smoked paprika until evenly combined.
