Instructions
Make the butterscotch syrup. Add the butter and brown sugar to a small saucepan over medium heat. Cook until the butter melts and the mixture becomes smooth and bubbly.
Finish the syrup. Stir in the heavy cream and vanilla extract until fully combined. Remove from the heat and let the syrup cool slightly.
Make the whipped cream. Add the heavy cream and 2 tablespoons of butterscotch syrup to a small bowl or cup. Whip with a milk frother until soft and fluffy.
Assemble the Butterbeer. Divide a few tablespoons of butterscotch syrup between two glasses. Slowly pour the chilled root beer into each glass, allowing it to foam as you pour.
Top and serve. Spoon the butterscotch whipped cream over each glass and serve immediately.

Notes
Use cold root beer. Chilled root beer makes the drink more refreshing and helps the topping stay fluffy.
Let the syrup cool slightly. If itβs too hot, it can melt the whipped cream.
Adjust the sweetness. Add more or less butterscotch syrup depending on how sweet you like your Butterbeer.
Pour slowly. Root beer foams quickly when poured over the syrup.
Make the syrup ahead. Store it in the refrigerator, then gently warm it if it becomes too thick.
Vanilla syrup option: You can use 2 pumps of vanilla syrup instead of vanilla extract.
