2-3tbsp tapioca starch(corn starch or other starches can work too but tapioca is best)

Instructions
Wash your russet potato and poke 3-4 sets of holes in it using a fork.
Put the potato in the microwave for approximately 6 minutes. You will know it's done with the skin easily peels off.
Peel your potato and mash it gently with a fork. Add your tapioca starch and salt and knead well into a "dough" while the potato is still warm (but not too hot!)
Baste the inside of your waffle maker with a little bit of canola oil. Divide your "dough" into two patties and press between the waffle maker.
