Potato Waffle

A crispy waffle made with russet potatoes and starch; perfectly crisp on the outside, and fluffy and chewy on the inside.

Ingredients

  • 1 large russet potato
  • 2-3 tbsp tapioca starch (corn starch or other starches can work too but tapioca is best)
  • salt to taste
  • canola oil

Instructions

  • Wash your russet potato and poke 3-4 sets of holes in it using a fork.
  • Put the potato in the microwave for approximately 6 minutes. You will know it's done with the skin easily peels off.
  • Peel your potato and mash it gently with a fork. Add your tapioca starch and salt and knead well into a "dough" while the potato is still warm (but not too hot!)
  • Baste the inside of your waffle maker with a little bit of canola oil. Divide your "dough" into two patties and press between the waffle maker.
  • Cook until golden brown and serve!
