What is a Potato Waffle?
A potato waffle is a crispy potato dish made by combining russet potatoes, salt, and tapioca flour. The outside of the waffle is golden brown and crispy, while the inside is soft and slightly chewy.
What Should I Serve Potato Waffles With?
I like to make a quick and simple aioli to serve with this dish. I combine mayo with lemon juice and dill. This is the perfect pairing.

If you want to make the best potato waffles, make sure you have the following ingredients:
- Russet Potatoes – you can use gold potatoes or other variations too; however, you may need to boil the potatoes instead of microwaving them.
- Tapioca Flour – corn starch or other starch variations would work as well but tapioca flour provides the best texture.
- Salt
How to Make Potato Waffles
- Firstly, wash your russet potato and poke 3-4 sets of holes in it using a fork.
- Then, put the potato in the microwave for approximately 6 minutes; you will know it’s done with the skin easily peels off.
- Peel your potato and mash it gently with a fork. Then, add your tapioca starch and salt and knead well into a “dough” while the potato is still warm, but not too hot!
- Baste the inside of your waffle maker with a little bit of canola oil. Then, divide your “dough” into two patties and press between the waffle maker.
- Cook until golden brown and serve your potato waffles!
