s'mores cookie

It sure does! I would still consider two cookies to be one serving though… but maybe that’s just me. Since this recipe is generous, feel free to store the other cookie in a ziploc bag or share it with a friend instead.

What do you do with the rest of the egg for this recipe?

To make this single serving cookie recipe you will need one egg yolk. This means that you will have the egg whites leftover. Store the egg whites in an air tight container in the fridge and use the next morning to make french toast or a scramble!

Why do my s’mores cookies keep falling apart/exploding?

To prevent s’mores cookies from exploding, follow these tips: (1) Chill the dough for 30-60 minutes after shaping to reduce spreading. (2) Encase the marshmallow properly by fully enclosing it within the dough to prevent expansion and leakage. (3) Use mini marshmallows or marshmallow bits instead of full-size ones, or cut large marshmallows into smaller pieces to minimize bursting. (4) Partially freeze marshmallows for 10-15 minutes before baking to slow down melting. (5) Shape the dough into rounded balls rather than flattening it, and place the seam at the bottom to secure the marshmallow. (6) Use marshmallow fluff instead of whole marshmallows for a gooey texture without excessive expansion.
