- Corn on the cob
- Mayo
- Chipotle pepper brine
- Creole seasoning
- Lime juice
- Honey
- Parsley
- Queso fresco
How to Make Mexican Street Corn
- Firstly, prepare corn on the cob by grilling, boiling or microwaving. I like to microwave my corn by wrapping each cob in a wet paper towel and microwaving for about 4 minutes; however, for 2 cobs together, I microwave for 5 minutes total.
- Then, to make the aioli, simply whisk together the mayo, chipotle brine, creole seasoning, lime juice, and honey.
- Finally, use a basting brush to evenly brush the chipotle aioli all over each corn on the cob, and garnish with chopped parsley, queso fresco, and a heavy sprinkle of creole seasoning, and serve!

Instructions
